Chicken Parmesan Bake


My goal is to share a yummy Sunday recipe with you every week!!!!




INGREDIENTS:

  • 12 ounces penne ziti (or any pasta shape)
  • 2 cups shredded, cooked chicken (about 2 small chicken breasts)
  • 1 (24 ounce)  Hunts spaghetti (original) sauce (Its my favorite)
  • 1 1/2 cups shredded mozzarella cheese (I used 2% low fat)
  • 1/3 cup freshly-grated Parmesan cheese (or the other is fine also)
  • 1/4 cup packed fresh basil leaves, roughly chopped (or a couple of dashes of dried Italian herb) is great to!

DIRECTIONS:

  1. Preheat oven to 375 degrees F.
  2. Cook the pasta in a large stockpot of well-salted boiling according to package instructions. Drain. Return pasta to the stockpot and add chicken and tomato sauce. Gently toss to combine until the pasta is evenly coated.
  3. Pour half of the pasta into a greased 11x7-inch or 9x13-inch baking dish. Sprinkle evenly with 1 cup of mozzarella cheese, half of the Parmesan cheese and half of the basil. Layer the remaining half of the pasta evenly on top. Sprinkle evenly with the remaining 1/2 cup of mozzarella cheese.
  4. Bake for 20-25 minutes until the cheese is melted and just barely starts to turn golden. Remove and sprinkle immediately with the remaining Parmesan cheese and fresh basil. Serve warm.

Wanted to share a yummy Sunday Casserole!!


Ingredients:
2 cups shredded cooked chicken
2 cups shredded Mexican cheese blend (divided)
1 (10 oz) can cream of chicken soup
½ cup milk
½ cup sour cream
1 can Ro-tel tomatoes (drained)
½ packet taco seasoning
1 large bag Doritos
Shredded lettuce (optional)
diced tomato (optional)
Step 1: Pre-heat the oven to 350 degrees. In a large bowl mix together shredded chicken, 1 cup of cheese, cream of chicken soup, milk, sour cream, Ro-tel tomatoes, and taco seasoning. Mix well.
Step 2: Grease a 2-quart casserole dish, and add a layer of crushed Doritos across the bottom. Top with a layer of the chicken mixture. Add another layer of crushed Doritos, and then add another layer of the chicken mixture. Top with remaining cheese. You can add more crushed Doritos on top as well if you wish.
Step 3: Cover and place into the oven and bake at 350 degrees for 30-25 minutes until bubbling hot. Remove from the oven and top with lettuce and tomato if you choose.

I need the summer days to kick back and drink some
BRAZILIAN LEMONADE!
This drink is so yummy! Check out the recipe below!


INGREDIENTS
  • 2 large limes, thin skinned
  • 2 cups water
  • 1 cup cold water
  • 1/2 cup sugar
  • 4 tablespoons sweetened condensed milk
  • Ice
DIRECTIONS
  1. Cut the limes in half and squeeze out the juice. You should have approximately 1/2 cup juice. Keep the rinds and set the juice aside.
  2. In a blender, combine the juiced rinds with 2 cups of water. Blend for one minute until the mixture is coarsely mixed and frothy (if you make this start to finish and feel the mixture is too bitter, try only blending this part for 30 seconds or 10-12 pulses). Strain the mixture through a fine-mesh strainer set over a liquid measuring cup or bowl, pressing on the solids to extract all the juice. You should have about 3/4 cup liquid, more or less. Stir in the reserved lime juice. (You can go ahead and discard the pulp in the strainer.)
  3. To the blender, add the cold water, sugar, lime juice mixture, and sweetened condensed milk. Blend for 10-20 seconds. Add ice as desired: I added probably about 2-3 cups of ice - enough to make it cool and frosty but not thick like a smoothie. Blend until smooth. Add more sweetened condensed milk or sugar to taste, if needed. Serve immediately.
